Make Your Own Ayurvedic Chutney: Kapha-Balancing Cilantro Chutney Recipe

Who is excited for the spring to finally be here? I know I am. As much as I love sitting by the fire with a hot mug of cocoa, being able to walk outside without freezing is just too appealing and enjoyable.

The sun is shining in all its glory, the birds are beginning to chirp again, and all the warmth of the season is finally melting off the excess kapha that has accumulated over the colder winter months.

This is the perfect season to participate in a cleanse. Really, any seasonal transition is an ideal time to cleanse. It's a great time to flush out the heaviness and prepare your body for the light and expansive qualities that will naturally come with spring, and then summer.

Try this super easy, super quick, and most importantly super tasty Ayurvedic chutney recipe to incorporate into your spring diet. It's packed with spices that are great for starting to help reset your digestion, as well as fresh cilantro—which has so many benefits in itself.

Ayurvedic Chutney Recipe with Cilantro and Spices

Ingredients:

  • 2 bunches fresh cilantro
  • ½ teaspoon minced garlic
  • ½ teaspoon grated ginger
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 2 teaspoons sugar (I prefer turbinado or pure cane sugar)
  • Juice of 1 lime
  • 3–4 slices of fresh jalapenos—depending on how much of a kick you want
  • Water as needed

Directions:

This is probably one of the easiest recipes ever. All you need to do is toss the cilantro into a blender and begin blending!

Add 1 teaspoon of water at a time to help with the consistency and the blending process. Be sure to constantly scrape down the sides to ensure that all the leaves get properly ground. You want the consistency of this chutney to be that of regular pesto, or maybe slightly thicker. I like mine a bit chunky. 

After the cilantro has blended to a consistency that you personally enjoy, throw the rest of the ingredients into the blender and blend just one more time to make sure everything has been incorporated.

You can use this chutney with almost anything: add it as a topping it on your kitchari, use it as a dip for crackers, a spread for your toast—whatever your heart desires. Happy Spring and happy cleansing!
