Ping Tung Long (Solanum melongena) is an easy-to-grow heirloom eggplant with a mild, delicate flavor. Prized for its tender, slender, and vibrant purple fruits, this Taiwanese variety has few seeds, making it perfect for grilling, stir-frying, and sautéing.

Start eggplant seeds indoors 8–10 weeks before the last expected frost. Plant seeds ¼ inch deep in seed-starting mix.
Germination takes approximately 7–14 days. Once the seedlings send out their first true leaves, transfer each one into a 3–4 inch pot.

Growing & Harvesting
Plant seedlings in full sun after temperatures warm, ideally in well-drained, fertile soil rich in organic matter. Keep soil moist but not soggy, watering less frequently as plants become more established. As the plants grow, provide support using stakes or cages.
Harvest eggplants when they grow 8–10 inches long. The flesh should feel firm and the skin should be deep purple, glossy, and smooth. Harvest at least twice per week to encourages continued production, especially during the warm summer months.
